This is so easy and quick to make...but always a favorite.

 

2 Cups Flour

1 Cup Sugar

1 1/2 tsp. Baking Powder

1/2 tsp. Soda

1 tsp. Salt

 

1/4 Cup  Oil

1 Egg, beaten

3/4 Cup Orange Juice

1 tsp. Orange Oil

1 or 2  tsps. Orange Peel

 

1 Cup fresh Cranberries , chopped   

1/2 Cup Walnuts or Pecans, chopped

 

Preheat oven to 350. F.  Grease and flour 9 x 5 loaf pan.  

Mix dry ingredients in large bowl. 

Mix oil, juice, egg,  peel and orange oil together in another bowl. 

Add to dry ingredients.  Mix just until moistened.  Fold in berries and nuts.  

Bake about 1 hour.  Cool before removing from pan.  Wrap and store over night for best flavor.
